What is rocky mountain oysters?

Rocky Mountain oysters, also known as prairie oysters, are a North American dish made from the testicles of bulls or other livestock. Despite their name, they are not related to seafood. These "oysters" are typically prepared by peeling, slicing, and then breading and deep-frying the meat, resulting in a dish that is crispy on the outside with a tender interior. They are often served as an appetizer in parts of the United States and Canada, especially in regions with a strong tradition of cattle ranching, like the Rocky Mountain area.

The dish is sometimes considered a novelty food, and it's often served at festivals, fairs, and specialty restaurants. It can be an acquired taste, especially because of its unconventional main ingredient. Because of the dish's association with cowboy culture, it is sometimes served at events like rodeos and ranch gatherings.
